Golden Yam Curry
Pre cooked yam cubed
100g frozen green beans
400g tin tomatoes
400g tin coconut milk
1 large onion sliced
2 coves garlic finely chopped
2 large tomatoes chopped
1 tsp ground coriander
1 tsp turmeric
1 tsp Garam Masala
1 tbsp olive oil
3 tbsp fresh chopped coriander
Cooked Jasmine Rice
1. Sauté onion in olive oil for around 5 mins.
2. Add garlic and spices cook a further 2 mins.
3. Add tin tomatoes simmer for 10 mins.
4. Add cooked yam, beans and coconut milk simmer for 10 mins.
5. Stir in fresh coriander before serving.
Notes:
Great way to use up leftover cooked yam or potatoes.
Serve with your favourite rice
