Creamy Chicory and Nutmeg Soup
This recipe uses Chicory, warming nutmeg and plant based cream to invite you in out of the cold to a hearty, flavoursome and deliciously creamy soup.
2 heads of Chicory blanched and chopped.
1 large onion chopped
200ml double planted cream
1 tsp ground nutmeg
2 garlic cloves crushed
1 cup leftover mash potato
800ml vegetable stock
Salt and pepper to taste
1. Add all ingredients to a deep saucepan or soup maker.
2. If using a saucepan, bring to the boil and simmer until veg are soft when squashed to the side of the pan.
3. If using a soup maker, this is best on a smooth setting and has four servings.
4. If using a saucepan to make your soup, blitz with a hand blender until smooth.
Notes:
Blanch chicory before use, this will reduce unnecessary bitterness.
